Fleischvögel (Beef Roulade)

Ingredients for 8 Roulades:

8 very thin slices of Sirloin tips, beaten (Rindssaftplätzli)
8 raw bacon slices
8 Tsp. Mustard (not to sweet. If you like it spicy, use Dijon Mustard)
1/2 Onion, chopped
1 Carrot, devided into eight
2-3 slices of normal white bread, cut (8) longish pieces
Salt
Pepper
Oil to fry
8 Tooth picks

Ingreadients for the Sauce:

500g Mushrooms, sliced
2 gloves of Garlic, chopped
1 Onion, chopped
3 Tbsp. white flour
2.5 dl Wine
1.5 dl Bouillon
Salt Pepper
Paprika Powder

Start by making the meat rolls. Take a slice of meat, salt and pepper it. Then spread the Mustard on one side. Lay the Bacon stripe ontop. Then lay one carrot piece and one bread piece ontop (Photo), and some Onion and roll them into the meat. Fixate with a tooth pick and go on until all 8 rolls are ready to fry.

Heat up some Oil in a frying pan and fry the rolls on a high heat until they are well fried and brown on every side. Then take them out and put them aside for a moment. Continue with the same pan for the sauce.

Add some more Oil to the pan and cook the mushrooms, Onion and Gralic in it for about 5 minutes.
Then sprinkle the flour over it and stir it under the mushrooms. Add the Wine, Bouillon and Paprika Powder.

Then put the meat rolls back into the pan with the sauce and let it cook on a low heat for about 1 hour, stir once in a while and be sure there is always enought liquid. If the sauce gets too thick, you can always add some water too it. Before serving, taste the sauce. If not salty enough, season to taste.

This Dish is great with mashed Potatoes, Potato Gratin or Noodles.
