Familia Swiss Müesli


I use Familia Swiss Müesli daily for many meal options with few ingredient using common home appliances. Here are some simple recipes for bread, granola, & breakfast.

Bread

Recipes measured to work with Breville Custom Loaf bread maker model BBM800XL. From experience with other bread makers, they will require minor adjustments based on their baking cycle.

Loaf

Add ingredients in this order to the bread pan:

  1. Salt ½ tea spoon
  2. Sugar 2 table spoons
  3. Olive oil or butter 50g
  4. Familia Swiss Müesli 114g. Replace with 100g whole wheat flour varieties as needed.
  5. Water 250g: adjust slightly ±3g depending on weather humidity
  6. King Arthur all-purpose flour 300g. Use 400g for all white bread without müesli. Leave an indent crater on top of flour heap to hold the yeast from falling into the water & activating prematurely.
  7. SAF Instant Yeast Red 1 table spoon. Other yeasts will not work with this recipe.

Insert pan in bread machine. Select WHOLE WHEAT setting. Start. Wait patiently for 3:32.

Remove the loaf immediately—the Keep Warm function does not work well. Place loaf on cooling rack for 30 minutes.

Rolls

Simple bread machine recipe for fluffy texture

  1. Add ingredients exactly as listed for the loaf above. For all white rolls, add one table spoon herbs as needed: rosemary, anise seeds, or
  2. Select DOUGH setting
  3. Wait for 1:30
  4. Remove the dough onto smooth clean surface or silicon mat
  5. Cut the dough into six pieces for average rolls or four pieces for large rolls
  6. Roll each piece under the palm of my hand in small circle motion for 30 seconds
  7. Place rolls on baking sheet with parchment paper
  8. Cover with a clean kitchen towel for 45 minutes
  9. Bake at 175ºC for 16 minutes
  10. Cool for 15 minutes

Pizza

  1. Add ingredients exactly as listed for the loaf above all flour without müesli
  2. Select DOUGH setting. Although there is a separate PIZZA setting, I find the dough rises better with the DOUGH setting.
  3. Wait for 1:30
  4. Remove the dough onto smooth clean surface or silicon mat
  5. Cut the dough into two pieces
  6. Stretch the dough by hand or with rolling pin
  7. Add pizza toppings
  8. Bake at 175ºC for 12 minutes

Granola

  1. 600g Familia Swiss Müesli + 100g extra virgin olive oil
  2. Mix well
  3. Spread thin in large pan
  4. Bake at 120ºC for 90 minutes—stir every 30 minutes
  5. Remove from oven
  6. Cover 40g dark chocolate to melt in a mound of hot granola for 5 minutes
  7. Mix well

Alternate option out of the box without any cooking is the Protein Crunch variation—although that does not have any chocolate.

Breakfast

Add 500ml boiling water to 125g müesli. Let cook & cool for 30 minutes.

Adjust the water level according to preference or to allow for adding milk.

When on the road, most services such as hotels, offices, & gas stations offer only hot water much less than boiling—not enough to cook the oats.

Instead, I use a fine blend of the müesli in a blending machine.

Familia Swiss Müesli fine blend to cook in hot water for instant meal, soak over night for cold breakfast, & mix with chocolate powder for energy drink

Soak the blend over night for cold breakfast.

Mix with chocolate powder for energy drink.

No Added Sugar

Identical to the original müesli except less sweet. I use it occasionally in the same recipes especially when I cannot find the original available for purchase.

Protein Crunch

Almost like granola crunch. Good snack as is straight from the box or to take on the road.

Premium

Best in bread recipe for more nutty bread.
