Now that I’m living in Sudtirol, I’ve been experimenting with new tastes. I’ve had the famous Sudtirolian Knödel a couple of times from restaurants and decided to try them out myself 🙂
I did a cheese version but there are several types, of which most of them use Speck, of course! I looked up several recipes and they all differ a little so I decided to give it a try with my own version…
So, this is my take on the Cheese Knödel:
NB: This recipe is for 2 people OR 3 if you want them as a side/starter.
- 150g old and dry Bread (crumbs) – I used wholemeal
- 2 medium Eggs
- 125ml Milk
- 2 tbs Flour
- 2 tbs Breadcrumbs
- Pepper
- 1 medium Onion (finely chopped)
- Cheese (to liking) – get your favourite, but a stronger cheese makes a nicer, cheesier taste.
- Fresh Parsley (chopped)
- Vegetable cube (for broth) – you can make actual broth, or use meat or chicken cubes
- Butter (for frying)
Steps:
- Start off by sautéing the Onion in a bit of Butter until it turns transparent/brown
- Whilst the onion is cooking, beat the Eggs with the Milk and add a bit of Pepper
- Mix in the Bread and press it with the fork to turn it a bit mushy
- Mix in the Parsley, Flour, Breadcrumbs and the Onions.
NB: If the texture is too runny, add more flour/breadcrumbs. If it is too dry, add a bit of milk. - Cut the Cheese into cubes (one for each Knödel). Grate the rest of the Cheese and add to the mixture.
- Now you shape it into Knödels! 🙂 Put some flour on your hand and on the plate to avoid stickiness. When you’ve shaped them, make a hole, stick the Cheese cubes in each and close them up.
- I decided to fry them up in a bit of Butter before boiling them to give them a bit of colour. I think it had quite a nice result. This is not to cook them, just to make them nice and brown.
- Now just put a Cube in water and when it boils, but the Knödels in. Boil for 15-20min…
- Serve!
They taste so gooood! I am very happy with the result and I got some compliments for the accomplishment as well 🙂 So, more Knödels in the future for me for sure!
