Maybe I shouldn't review this because I didn't quite make these as written. I used turkey pastrami for the meat and as my family aren't fans of kimchi, I stuck with sauerkraut. My panini press made these a snap to make but we weren't all that taken with the sauce. Next time I'll just stick with our usual reuben recipe.
I was very surprised at how good this was! I think next time, I would also skip the roast beef and just use the corned beef. I also like the idea of the jalapenos, but it would depend on how spicy the kim chi you use is. Mine was pretty spicy and I didn't think it was too salty until later in the night! I browned the sandwiches on one side, then turned over and put in the oven for about 5 min. to help melt the cheese. Served with creamy coleslaw and baked steak fries.
This was outstanding!! It was so delicious. The combination of flavors was great. I just used straight up corned beef instead of half corned beef and half roast beef. It was very quick and easy to make.
Delicious! We subbed pickled jalapenos for the dill pickles to give this a little more kick and make it even more cross-cultural. :)
